Roasted Chicken Enchiladas


Ingredients
Shredded whole chicken 
Soft corn tortillas
Smokey spicy cheese 
Red chili enchilada sauce

Preheat oven 350F. 

Mix shredded chicken, grated cheese, and enchilada sauce all together in a bowl. 

Pour some enchilada sauce on bottom of baking dish. 

Heat up each tortilla in a pan to just warm the tortilla to make it malleable and easy to roll. As your heating up one tortilla fill the warmed tortilla with the chicken mixture. Roll and place seal side down in the baking dish. Once entire area is filled with stuffed tortillas pour the rest of the enchilada sauce over top and then add the rest of the cheese and cover completely. Bake for about an hr. 

Serve with Spanish Mexican rice and refried beans.
